We use Tono Hinoki cypress, grown on the Gifu side of Mount Ontake, which straddles Nagano and Gifu prefectures.
Tono Hinoki cypress grows in a harsh environment for trees, with poor soil, little annual rainfall, and harsh winters. It takes several times longer to grow than cypress from other regions, resulting in dense annual rings and firm bodies .
It is highly durable and water-resistant, making it the perfect wood for cutting boards.
Strong and beautiful straight grain board
63 hinoki cutting boards are made from "straight-grained width-spliced lumber."
Straight-grained boards are made by cutting a log vertically from its core to its ends and lumbering it, resulting in a straight grain pattern.
These width-spliced lumber, made by lining up straight-grained boards widthwise and gluing them together, is durable and resistant to warping and cracking, and the beauty of the wood grain selected by craftsmen is also an appealing feature.
Gentle blade contact
Cypress cutting boards are elastic, which helps protect the blade of your knife from damage and chips when cutting foods.
The surface of the board supports the blade of your knife, allowing you to cut with a light, tapping sound.

One-point branding iron
The number 63 logo is branded iron on the right side of the cutting board.
*The thickness of the cutting board and the size of the branding iron are the same for all sizes.
For long-lasting use
◎ Moisten both sides of the cutting board before each use
◎ Wash with water immediately after use
If odors or stains are a concern, use a neutral detergent
◎ Dry thoroughly in a well-ventilated shady area
* Do not use dishwashers, dish dryers, or bleach
* If the board warps, cover it with a damp cloth, place a weight on it, and leave it overnight to reduce the curl.
"Wood resin" is a sign of health
Sticky stains that appear on the surface are the oozing of an oily component called "wood resin"
They are not caused by dirt or damage, and do not pose a food hygiene problem or harm to the human body.
It suppresses the growth of bacteria and the growth of mold, and the more wood resin there is, the more water-resistant the item becomes and the more it prevents blackening.
If you are bothered by stickiness of wood resin, rinse it off with hot water or lightly polish it with sandpaper.
